Cilantro Lime Steak Bowls

 


2 lbs. flank steak

½ cup avocado or olive oil

Zest of 1 lime

Juice of 2 limes

4 cloves fresh garlic, minced or finely chopped

½ cup chopped cilantro

2 tsp. kosher salt

½ tsp. black pepper

4 cups cooked rice

2 avocados, sliced

1 can (15 oz) black beans, heated

1 can (15 oz) corn, heated

1 cup shredded cheddar cheese

½ red onion, diced

For the lime crema:

1 cup sour cream

2 teaspoons Tajin seasoning

Juice of 1 lime

 

 Place flank steak in a shallow dish or zip-top bag. Add oil, lime zest, lime juice, garlic, cilantro, salt, and pepper in a small bowl. Whisk to combine then pour over steak. Make sure both sides of the steak are coated. Cover (or seal) and place in refrigerator to marinate for 30 minutes to 3 hours.

Heat grill to medium-high then place steak on. Grill for 10 minutes then flip. Grill for 10 minutes more or until steak reaches desired internal temperature. Place steak on a plate or cutting board then allow to rest for 5-10 minutes. Slice into thin strips against the grain or into cubes.

Add rice, steak, avocado, black beans, corn, cheese, and onion to individual bowls. Drizzle with lime crema.

NOTES

To add even more flavor use cilantro lime rice.

Fannie Farmer's Classic Baked Macaroni and Cheese


1 (8 oz.) package macaroni
4 Tbsp. butter
4 Tbsp. flour
1 cup milk
1 cup cream
½ tsp. salt
black pepper, to taste
2 cups cheddar cheese, shredded good quality
½ cup breadcrumbs, buttered


Preheat oven to 400°F.

Cook and drain macaroni according to package directions; set aside.

In a large saucepan melt butter.  Add flour mixed with salt and pepper, using a whisk to stir until well blended.

Pour milk and cream in gradually, stirring constantly. Bring to boiling point and boil 2 minutes (stirring constantly). 

Reduce heat and cook (stirring constantly) 10 minutes.
Add shredded cheddar little by little and simmer an additional 5 minutes, or until cheese melts. 

Turn off flame and add macaroni to the saucepan and toss to coat with the cheese sauce.

Transfer macaroni to a buttered baking dish. Sprinkle with breadcrumbs.  Bake 20 minutes until the top is golden brown.

Chipotle Chicken Enchiladas

9 corn tortillas
1 15-oz. can crushed fire-roasted tomatoes
1 cup low-sodium chicken broth
2 Tbsp. packed fresh cilantro
½ small chipotle chile in adobo, plus 1 tsp. sauce from the can
½ tsp. ground cumin
2 Tbsp. vegetable oil, plus more for the dish
Kosher salt and freshly ground pepper
2 cups shredded rotisserie chicken (skin removed; about 8 ounces)
½ cup sour cream
1 cup shredded monterey jack cheese (about 4 ounces)
1 cup shredded cheddar cheese (about 4 ounces)
Diced avocado and sliced scallions, for topping

Preheat the broiler. Tear 1 tortilla into pieces and transfer to a blender. Add the tomatoes, chicken broth, cilantro, chipotle and adobo, and cumin; puree until smooth.

Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the pureed sauce and simmer, stirring occasionally, until slightly thickened, 6 to 8 minutes. Remove from the heat and season with 1/2 teaspoon salt and a few grinds of pepper.

Meanwhile, coat a 9-by-13-inch baking dish with vegetable oil. Mix the chicken, sour cream, 1/2 cup of each cheese and a pinch each of salt and pepper in a medium bowl. Warm the remaining 8 tortillas in the microwave as the label directs. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla and roll up to enclose. Arrange side by side in the prepared baking dish and brush with the remaining 1 tablespoon vegetable oil.


Broil the enchiladas until lightly toasted, 3 to 5 minutes. Top with the tomato sauce and sprinkle with the remaining cheese. Broil until the sauce is bubbling and the cheese melts, 1 to 2 minutes. Top with avocado and scallions.

Red Beans and Rice Tortilla Casserole

  • 1 package ZATARAIN'S® Red Beans and Rice
    1 can (8 3/4 ounces) whole kernel corn, drained
    1 can (4 1/2 ounces) chopped green chiles, undrained
    6 (8-inch) flour tortillas
    2 cups shredded cooked chicken
    2 cups shredded Cheddar cheese

    Prepare Rice Mix as directed on package. Add corn and green chiles; mix well
    Preheat oven to 350°F. Spread ½ cup of the rice mixture on bottom of 13x9-inch baking dish sprayed with no stick cooking spray. Top with 3 of the tortillas, overlapping as needed. Layer with ½ each of the remaining rice mixture, chicken and cheese. Repeat layering with remaining tortillas, rice mixture, chicken and cheese
    Bake 15 minutes or until heated through. Let stand 5 minutes before serving.
    Serve with assorted toppings, such as sour cream, salsa and chopped green onions, if desired.
