1 (15.5 oz.)
can black beans, rinsed and drained
1 medium
mango, peeled and diced (about 1 cup)
½ cup diced
red onion (about ½ medium onion)
½ cup chopped
fresh cilantro
1 Tbsp. fresh
lime juice
2 tsp. red
wine vinegar
½ tsp. sugar
¼ tsp. garlic
powder
¼ tsp. kosher
salt
1/8 tsp. black
pepper
1 medium
avocado, diced
In a large
bowl, combine the beans, mango, onion and cilantro.
In a small
bowl, combine the lime juice, vinegar, sugar, garlic powder, salt and pepper. Stir to dissolve the sugar and then pour over
the black bean mixture. Cover and chill
in the refrigerator for at least an hour.
When ready to
serve, gently fold in the diced avocado.
Season with additional salt and pepper to taste.
