Roasted Jicama

1 cup jicama, cut into 1" cubes
1 small potato, cut into 1" cubes
1 small onion, chopped
1 Tbsp. olive oil
2 cloves garlic, minced finely
1 tsp rosemary

Preheat oven to 400°.  Toss all the ingredients together.  Spread in baking pan.  Roast for 1 hour, stirring every 15 minutes.
